The Olivier salad – Салат Оливье is a much-loved dish in Russia, where it is a firm favourite for many a special occasion, including Christmas. There are several variations on the dish, but this is my favorite:

Ingredients (serves 4)

4–5  potatoes
3  eggs
2  carrots
1  onion
1 tin peas
200 g mortadella
100 g pickled gherkins
Mayonnaise and sour cream, dill, chives and 1 apple, to taste

Olivier salad – Салат Оливье

Method:

Boil the unpeeled potatoes and carrots until they are cooked. Leave to cool, then peel. Hard boil the eggs and de-shell. Dice the carrots, potatoes, eggs, gherkins, mortadella and onions. Drain the peas well and add. If using the apple, dice it and mix everything together. Dress the salad with mayonnaise, a little sour cream, salt and pepper. Garnish with dill, parsley and chives. Chill in the fridge for approx. 1–2 hours. This salad can be enjoyed alongside your main course, or simply with bread and pierogies.
